Two Pinot Noirs are open on the pass: one pale, tart and herbal, one deep, sweet-fruited and soft. Same grape, same producer, same year. The only difference is that one vineyard sits at the foot of the slope and one halfway up it. The guest wants to know how that is possible.
Climate bands and what they produce

Continental climates (large temperature swings, short seasons: Burgundy, Mendoza) give vintage variation and fresh acidity. Maritime climates (moderated by large water bodies, wetter: Bordeaux, Bordeaux-like Margaret River) ripen slowly with rain risk. Mediterranean climates (warm, dry summers: Provence, coastal California) ripen reliably and generously.
The growing environment, factor by factor
- Latitude sets the baseline heat and day length. Most vineyards sit roughly 30 to 50 degrees from the equator; outside that band, something else must compensate.
- Altitude cools. Higher vineyards are cooler, with a larger day/night swing (diurnal range) that retains acidity while fruit ripens. This is why Mendoza at 1,000m can grow fresh wine at a hot latitude.
- Aspect and slope control sun interception. In cool regions, a south-facing slope (northern hemisphere) is worth a whole ripeness band. Slopes also drain cold air and water.
- Proximity to water moderates: seas, lakes and rivers store heat, buffer frost, and can bring cooling fog or breeze. It can also bring humidity, and humidity brings rot.
- Soil matters mostly for drainage and water-holding, and for heat retention. Well-drained gravel warms and stresses the vine gently; clay holds water and stays cold; limestone holds moisture but drains.
- Water availability is the master control on vine vigour. Mild water stress after veraison concentrates fruit; drought shuts the vine down; excess water bloats berries and dilutes.
What the grower actually decides
- Canopy management: opening the canopy raises sunlight on the fruit and airflow (less rot, riper tannin, fewer green flavours); shading protects against sunburn in hot climates.
- Yield: lower yields generally concentrate flavour and are enforced in the better appellations. High yields dilute.
- Harvest timing: the single most powerful stylistic lever. Early picking gives acidity, lower alcohol and green notes; late picking gives ripe tannin, higher alcohol, sweeter fruit, lower acidity.
- Vine age: old vines yield less and are usually more consistent, giving concentration; they are also expensive to farm.
- Hazards and disease: frost, hail, drought, fungal disease (downy and powdery mildew, grey rot), and pests. Every one of these reduces crop and drives price, and some, notably rot, damage quality directly.
Onboard Notes
Vintage variation is weather written into a bottle. When a chef asks why last year the same wine was leaner, the answer is almost always a cooler, wetter or shorter season, not a change of philosophy.
