Water Quality Onboard: Hardness, TDS and Scale

Explains why water chemistry drives both coffee flavour and machine health, gives working targets for TDS, hardness and alkalinity, and covers RO/watermaker water, filtration and scale prevention onboard.

The chief engineer switches the galley over to watermaker supply and, within a fortnight, the espresso tastes hollow and the machine is throwing a low-flow warning. Nothing changed in the beans, the grind or your technique. Coffee is over 98% water, and on a yacht that water is the variable nobody thinks about until the machine is broken.

Why Water Makes or Breaks Coffee

Water does two jobs: it dissolves flavour out of the coffee, and it either protects or destroys your machine.

  • Minerals extract flavour. Magnesium and calcium bind to flavour compounds and pull them into solution. Water with almost no minerals extracts poorly and tastes flat, hollow and sharp.
  • Alkalinity buffers acidity. Carbonate hardness (KH) neutralises coffee's acids. Too little and the cup is aggressively sour; too much and it tastes chalky, dull and muted.
  • Hardness deposits scale. Calcium carbonate precipitates out of hot water and coats boilers, elements and valves.

The Yacht Problem: RO and Watermaker Water

Reverse osmosis and watermaker output is typically very low TDS — sometimes close to zero. That is excellent drinking water and terrible coffee water.

  • Symptoms of over-pure water: flat, empty, papery coffee; harsh sourness; no sweetness or body, no matter how well you dial in.
  • Symptoms of hard shore water: scale, slow flow, extended shot times, boiler noise, eventually machine failure.
  • Shore water in the Med varies enormously by marina. Water you take on in one port can be nothing like the last.

Managing It

  • Test the water. A cheap TDS meter and hardness test strips belong in the galley drawer. Test after every bunkering and every switch of supply.
  • Filter and treat: an inline filter cartridge (carbon block for chlorine and taste, plus a hardness-managing resin) is standard on plumbed machines. Change the cartridge on schedule, not when it fails.
  • Remineralisation: where water is very low TDS, a remineralising cartridge or dosing of purpose-made mineral concentrate brings it back into range. Never improvise with table salt or random additives.
  • Softeners reduce hardness but can leave water corrosively low in buffering. Balance, not zero, is the goal.
  • Log filter change dates and water tests. It is the only way to know whether today's bad coffee is new or has been creeping up on you.

Onboard Notes

  • Scale is the number one killer of yacht espresso machines and the most expensive to fix at sea. Prevention through filtration is cheaper than a heating element in Palma in August.
  • If a machine's flow rate drops or shot times creep up steadily over weeks with no other change, suspect scale before you suspect the grinder.
  • Do not fill a machine reservoir from a hot tap or from an unfiltered deck hose.
  • Coordinate with the engineer: they own the water systems and will know what the watermaker is producing and what has been dosed into the tanks.
