The guest orders a flat white. Your espresso is perfect. Then you screech the milk into stiff, dry bubbles at 80 C, the foam separates in the cup, and what lands on the tray is a hot, thin, cooked-tasting drink with a crust of froth. The milk is where most yacht coffee fails.
Why Milk Textures at All
- Proteins (casein and whey) unfold when heated and agitated, and wrap themselves around air bubbles. This is what stabilises foam.
- Fat gives mouthfeel, richness and sweetness, and helps keep foam smooth. Whole milk textures most forgivingly.
- Lactose is the sugar. Gentle heating makes milk taste sweeter; overheating destroys that sweetness.
- Above roughly 70 C the proteins begin to denature past the point of holding foam, and above about 75 C milk starts to taste scalded, eggy and flat, and it will not re-foam.
Microfoam is milk with air folded in so finely that the bubbles are invisible: glossy, wet paint, pourable, with no visible froth. That is the target for every milk drink.
Steaming: The Two Phases
- Purge the wand. Always, before it touches milk.
- Stretching (aeration): with the tip just at the surface, introduce air. You want a gentle, steady hiss or "tearing paper" sound — not a screech. This is where the volume grows. Aerate only in the first few seconds, while the milk is still cold (below about 37 C).
- Texturing (whirlpool): submerge the tip slightly, angle the jug and set the milk spinning. The vortex breaks big bubbles down into microfoam. Keep it spinning until you hit temperature.
- Stop. Turn off steam before you lift the wand out. Wipe and purge the wand immediately.
- Groom the milk: tap the jug to pop stray bubbles, then swirl until glossy. Pour straight away — textured milk separates within a minute.

Temperature
- Target roughly 55-65 C for a standard milk drink; this is where lactose sweetness peaks and the drink is still comfortably hot.
- Do not exceed about 70 C. Beyond this you scald the milk.
- Judge by hand on the jug, or use a thermometer. Never re-steam milk.
- If a guest asks for extra hot, steam to the top of the range and tell them honestly that hotter milk tastes less sweet. If they still want it hot, serve what they ask for.
Latte Art Basics
Latte art is proof of texture, not decoration for its own sake. If the milk is right, art follows.
- Pour from height at first to push the milk under the crema, then drop the jug close to the surface to let the white float.
- Heart: pour into the centre, let the white bloom, then cut straight through it.
- Rosetta: as the white surfaces, wiggle the jug side to side while drawing slowly backwards, then cut through.
- Fill the cup to the rim, cleanly, with no drips down the outside.
Onboard Notes
- Milk is a high-risk food. Keep it below 5 C, check dates, discard opened milk per policy, and never top up fresh milk into a part-used jug.
- The steam wand tip must be purged and wiped every time. Dried milk inside a wand is a contamination risk and blocks the tip.
- In a seaway, fill jugs no more than half full and steam with the jug braced. Hot milk on a moving yacht causes real scalds.
