A guest asks for her steak tartare, the owner wants the soft cheese board left out through the afternoon, and the chef has bought chicken from a market with no cold chain. Three different pathogens are now in play, and each one behaves differently. You need to know which is which.
The pathogens a caterer must know

The patterns worth memorising
- Very fast onset (1-6 hours) points to a pre-formed toxin: Staph aureus or emetic Bacillus cereus. The food was contaminated and then mishandled after cooking.
- Slow onset (days) points to an infection that had to multiply in the gut: Campylobacter, E. coli O157, Listeria.
- Spore-formers (Clostridium perfringens, Bacillus cereus) are diseases of bad cooling, not bad cooking.
- Low infective dose organisms - Campylobacter, E. coli O157, Norovirus - need only a smear on a hand or a board. Dilution does not save you.
Food poisoning vs food-borne infection
- Food poisoning: the food itself contained the bacteria in large numbers or their toxin; generally faster onset.
- Food-borne infection: a small number of pathogens invade and multiply in the body; slower onset. Campylobacter, E. coli O157, Listeriosis and Norovirus are properly infections.
Both are prevented by the same disciplines: separation, temperature control, personal hygiene and cleaning.

Pregnant guests are common and rarely announce themselves - treat the Listeria foods (pate, soft cheese, cold smoked fish, chilled desserts) with real cold-chain discipline, because Listeria is the one pathogen that keeps growing in your fridge. If a crew member has an infected cut or a boil, that is Staph aureus territory: cover it with a blue detectable waterproof dressing and keep them off ready-to-eat food. And Norovirus is the outbreak yachts actually get - one vomiting incident in a guest heads can close a charter.
