You are on the 0600 watch and the galley fridge alarm has been muted by someone. The display reads 11 degrees C. Inside are the guests' cold cuts, a tray of tiramisu and tomorrow's fish. Nobody knows how long it has been like that. What you decide in the next ten minutes is the whole of temperature control.
The danger zone and why it exists
The danger zone is the temperature range in which pathogenic bacteria multiply readily. It is widely taught in catering as 5 degrees C to 63 degrees C, with the fastest growth around 20-45 degrees C. Below 5, growth slows dramatically; above 63, most vegetative bacteria stop growing and begin to die. Bacteria are not killed by chilling - they are paused. Take the food back out and the clock restarts.
The important exception you must remember: Listeria monocytogenes grows at refrigeration temperatures, slowly but genuinely. Cold storage is a delay, not a cure.

Learn the figures, but learn the principle behind each: keep food out of the danger zone, and where it must pass through, move it through fast. Statutory figures are jurisdiction-dependent, and the yacht's own documented food-safety management system defines the limits you actually work to.
Chilling
- Get deliveries into the fridge immediately - chilled goods first.
- Do not overload; air must circulate. A packed yacht fridge has warm pockets.
- Keep the door shut. Every opening in a 32-degree galley is a heat load.
- Monitor and record air temperature at least daily (most yachts do it twice daily), and probe between packs to check.
Freezing
Freezing stops bacterial growth; it does not sterilise. Bacteria survive and resume on thawing. Freeze at peak quality, in shallow portions, well wrapped (freezer burn is quality, not safety), and label with contents and date. Do not refreeze thawed raw food.
Thawing - where most yachts go wrong
- Thaw in the refrigerator, on the bottom shelf, in a container that catches the drip liquid. That liquid is contaminated.
- Allow enough time: a large frozen bird can take 24-48 hours or more. Plan two days ahead.
- Never thaw on the galley bench or in the sink under a running tap into which you then wash salad.
- Check the food is fully thawed before cooking - ice in the cavity means the core will not reach temperature.
- Cook thawed food within 24 hours as a standard rule, and never refreeze it raw.
Onboard Notes
Marine fridges struggle: high ambient temperature, seawater-cooled condensers fouling with growth, and doors opening constantly through service. Fit and check an independent thermometer in every unit - do not trust the door display alone. Power failure or generator changeover: keep the doors closed, note the time, and when power returns probe the food, not the air. If high-risk food has been above 8 degrees C for more than around four hours, or you cannot say how long, the safe call is to throw it away - and record the decision. A binned tray of tiramisu is cheaper than an evacuation.
