Your provisioning agent in an unfamiliar port delivers to the quay at 1400. The chilled goods sit in the sun for forty minutes, go into an open tender, cross the bay in 34°C heat, and arrive in the galley soft and sweating. Nobody did anything wrong by the letter of the procedure — because the procedure never described this. Closing that gap is design work, not nagging.
The four contamination routes

Control by design, not by nagging. If the only thing preventing cross-contamination is a crew member remembering, the control will fail on a long day. Ask instead: can the wrong action be made physically impossible or obviously wrong? Separate storage, one-way workflow, colour coding, a sink that is only a handwash sink, a fridge that only holds RTE food.
Where the yacht chain breaks
- Provisioning in unfamiliar ports. You cannot audit the supplier. Judge on what you can see: vehicle temperature, product temperature on arrival, date codes, packaging integrity, evidence of thaw and refreeze. Reject on the quay — never "check it later".
- The tender or launch transfer. This is the single most common cold-chain break in yachting. Design it out: insulated boxes with pre-frozen packs, chilled goods loaded last and landed first, temperature checked and recorded on arrival, a hard rule that chilled stock is never left on the dock.
- Long passages. Stock rotation, date control and the Listeria problem: refrigeration slows most organisms but Listeria grows in the fridge.
- Water taken from shore. Only bunker potable water from an approved point, with a clean, dedicated, capped hose. Test and record chlorine residual; maintain the system. Contaminated bunkered water can carry E. coli, norovirus and Hepatitis A into every drink, every ice cube and every washed salad on board.
- Ice. Ice is a food. Made from suspect water, or handled with hands and glasses, it is a direct vehicle. Use potable water, a scoop stored outside the machine, and a cleaned, descaled, serviced machine.
Acceptance is a control point
Delivery acceptance is where most yacht hazards are either stopped or invited aboard. Give it a written standard, a probe, a record, and the authority to refuse.

- Give the tender run a written cold-chain procedure. It is the gap nobody writes down.
- Never let anyone put a hand or a glass into the ice machine.
