Sparkling, Fortified, Oak and Sweetness

Sparkling wine gains its bubbles from a second fermentation in bottle or tank, and fortified wine gains strength from added spirit whose timing decides sweetness. Oak seasons a wine while steel preserves fruit, and residual sugar sets the dry-to-sweet scale.

It is 18:00, the guests are on the aft deck, and the order is a bottle of Champagne, a glass of Sauternes for dessert later, and "something like a sherry" for the owner. Three very different wines, three very different processes — and if you understand how each got its bubbles, its sweetness or its strength, you will pour and describe all three correctly.

Sparkling Wine

Bubbles are carbon dioxide trapped under pressure. A dry base wine is made first, then a second fermentation is triggered by adding yeast and sugar. The CO2 from that second fermentation has nowhere to escape.

Champagne's sweetness is set at the end by the dosage. In rising order of sweetness: Brut Nature / Zero, Extra Brut, Brut, Extra Dry, Dry (Sec), Demi-Sec, Doux. Note the trap — "Extra Dry" is sweeter than "Brut".

Fortified Wine

Grape spirit is added, taking the wine to roughly 15–22% abv. Timing is everything:

  • Add spirit during fermentation → yeast is killed while sugar remains → sweet fortified wine. This is Port.
  • Add spirit after fermentation is completedry fortified wine. This is Fino Sherry, aged under a film of yeast called flor. Oloroso is fortified higher, ages in contact with oxygen, and is dry but richer and nuttier.

Sweet cream sherries are sweetened afterwards. Sherry comes from Jerez in southern Spain; Port from Portugal's Douro Valley.

Oak versus Stainless Steel

Oak is a seasoning, not an ingredient. Overdone, it buries the fruit.

Sweetness Levels

Sweetness comes from residual sugar — sugar the yeast did not convert. The usual scale is dry, off-dry, medium, sweet. Sweet wines can be made by stopping fermentation early, by concentrating sugar in the grape (late harvest, noble rot as in Sauternes, drying, or freezing as in Icewine), or by adding sweetness back.

Onboard Notes

  • Do not "pop" a Champagne cork for show. Hold the cork, turn the bottle, and let it sigh. A flying cork at close quarters is a genuine injury risk.
  • Once opened, Fino and Manzanilla sherry are delicate — refrigerate and use within days. Vintage Port needs decanting; it throws heavy sediment.
  • A guest who asks for "dry Champagne" almost always means Brut. Confirm gently rather than serving Sec.
