The Flavour Framework and Balance Maths

The eight levers of flavour — sweet, sour, bitter, salt, umami, texture, aroma, temperature — and the ratio, dilution and ABV maths used to diagnose and correct an unbalanced drink.

Your first attempt at the Provence Sour tastes thin and sharp. The guest is not going to say "the acid is dominating at 0.9 percent" — she will say she does not like it. Your job is to diagnose the fault in a language precise enough to fix it in one iteration, not five.

The Eight Levers

Every cocktail is an arrangement of a small number of variables. If a drink is wrong, one of these is wrong.

Salt and texture are the two most under-used levers on a yacht bar. A few drops of 20% saline solution makes a citrus drink taste rounder and less thin without adding sugar — which is precisely the answer for a guest who says she does not like sweet drinks.

Balance Maths

Work in millilitres and hold the total volume steady while you vary the ratio.

  • The classic sour: 60 ml spirit / 22.5 ml citrus / 22.5 ml simple (1:1). Sharper: 60/25/20. Softer: 60/20/25 or switch to rich syrup.
  • Simple (1:1) is roughly 50% sugar by mass; rich (2:1) is roughly 66%. Swapping 1:1 for 2:1 raises sweetness without adding volume — a way to sweeten without watering down.
  • Fresh lemon sits around 5-6% total acid, lime around 6%. They are not interchangeable one-for-one; lime is sharper and shorter-lived.
  • Dilution is part of the recipe, not an accident. A hard shake adds roughly 20-25% water; a stir adds about 10-15%. A drink that tastes right in the mixing tin and harsh in the glass has usually been under-diluted.
  • ABV target: a stirred, spirit-forward drink lands around 28-32% ABV; a shaken sour around 15-20%. Calculate: (spirit ml x spirit ABV) / total volume including dilution.

Testing and Iterating

  • Change one variable at a time, by a meaningful step (5 ml, not 1 ml).
  • Taste at serving temperature and serving dilution. Warm, undiluted samples lie to you.
  • Taste against a control — the previous version, side by side.
  • Palate fatigue is real. After roughly six tastes, rinse with water, eat a plain cracker, and pause. Better still, use a second palate: another crew member is a cheap and honest instrument.

Onboard Notes

  • Never taste from the guest's glass or the service straw. Draw a small sample into a clean tasting glass or use a fresh straw each time; the yacht's food-safety system will require it.
  • Sweetness perception drops as temperature drops. A drink balanced at room temperature will taste sour and thin when served properly cold — always taste cold.
  • Do not iterate on the good stuff. Prototype with the mid-shelf bottle and build the final version on the owner's rare spirit only once the ratio is locked.
