The guest wants an Old Fashioned that tastes, somehow, of the bacon he had at breakfast — and the owner wants a Piña Colada that is completely clear, because he cannot bear anything cloudy in a glass. Both requests are answerable with the same underlying idea: you can move flavour into or out of a liquid by exploiting what does and does not dissolve in it.
Fat-Washing
Many of the flavour compounds we love — in butter, bacon fat, coconut oil, sesame oil, brown butter — are fat-soluble. Fat-washing dissolves those compounds into the spirit, then removes the fat itself, leaving flavour and a rounder mouthfeel behind.
Method:
- Melt the fat and combine with the spirit at roughly 30-60 ml fat per 700 ml.
- Agitate, then rest at room temperature for 2-4 hours so the compounds transfer.
- Freeze for at least 12 hours (overnight is better). Fat solidifies; ethanol does not.
- Lift or break the fat cap, then strain through a fine sieve and a coffee filter to catch the last emulsified droplets.
Under-freezing is the classic failure: droplets slip through, the drink looks greasy in the glass and turns rancid within days. Fat-washed spirits are perishable — refrigerate, date, and use within a few weeks.
Clarification
Clarification removes solids and haze while keeping flavour. Three methods matter onboard.

Milk clarification, honestly described: you add the acidic drink to warm milk (never milk to acid), the milk curdles, and the curds coagulate around the particles that cause haze and harshness. You then filter through a Superbag or coffee filter — often twice, using the first pass as its own filter bed. The result is clear, softer, longer-keeping, and it tastes of the drink plus a faint dairy roundness. It is not magic; it is curdling and filtering. It is not dairy-free, and it must be declared to any guest avoiding dairy.
Clarified liquids are also more batchable and bottleable — clear, stable, and ideal for pre-carbonation.
Onboard Notes
- Both techniques create perishable, temperature-sensitive products. They live in the fridge, labelled and dated, under the yacht's food-safety system.
- Filtration is slow. Do not start a milk clarification at 1700 for a 1900 service; gravity does not care about your timeline.
- Fat-washing with animal fats raises dietary and religious questions. Flag pork, dairy and shellfish-derived fats on the spec sheet and check preference sheets first.
- Never leave a container of spirit in the freezer without a label. Another crew member will assume it is drinkable, and drinking a fat-cap experiment is a bad evening for everyone.
