Two bottles of Sauvignon Blanc sit in your fridge: a Sancerre and a Marlborough. A guest asks which is "the fresher one" and which will suit the ceviche. If you can place each wine on a cool-to-warm scale in your head, you can answer confidently — and you will be right far more often than you are wrong.
The Three Climate Bands
Wine regions are conventionally grouped by average growing-season temperature. The bands are a generalisation, but they are a genuinely useful one.

Why Temperature Changes the Wine
Warmth drives sugar accumulation and burns off acid. So, all else equal:
- Cooler site → higher acidity, lower sugar → lower alcohol, crisper wine.
- Warmer site → lower acidity, higher sugar → higher alcohol, richer wine.
- Flavour shifts from green and citrus in the cool, through red fruit, to black, jammy and tropical in the warm.
- In cool climates black grapes may struggle to ripen tannin fully, giving a herbaceous, leafy edge.
The Same Grape, Two Climates
This is the single most useful comparison in wine.

The Modifying Factors
Latitude is not the whole story. Local features push a site cooler or warmer than the map suggests:
- Altitude — Mendoza sits at a warm latitude, but vineyards above 1,000 m have cool nights that preserve acidity.
- Ocean and lakes — moderate extremes; sea breezes cool Marlborough and coastal California.
- Aspect and slope — a south-facing slope in the northern hemisphere catches more sun.
- Diurnal range — hot days with cold nights give ripe fruit and fresh acidity.
- Rainfall and drought — vines need water, but excess dilutes flavour.
Onboard Notes
- Guests often say "dry" when they mean "crisp" or "not fruity". Ask what they drank and enjoyed last; the climate framing lets you steer to something similar.
- In hot Mediterranean anchorages, alcohol matters. A 15% Barossa Shiraz at lunch on deck is rarely a kindness — offer a lighter, cooler-climate option alongside.
- Never state a wine's exact alcohol from memory. Read the label; it is printed there for a reason.
