The Grapevine and the Growing Cycle

The vine variety and the growing season set a wine style before any winemaking begins: skins carry colour, tannin and flavour, while ripening raises sugar and lowers acidity. Harvest timing and vintage weather explain much of the difference between two wines from the same grape.

Climate: Cool, Moderate and Warm

Growing-season temperature sorts regions into cool, moderate and warm, and this drives acidity, alcohol, body and flavour. Altitude, sea breezes, aspect and diurnal range modify what latitude alone would predict.

Making White, Red and Rose Wine

White wine ferments without skins, red ferments on its skins to gain colour and tannin, and rosé takes only brief skin contact or a direct press. Malolactic conversion softens acidity and is used selectively in white wines.

Sparkling, Fortified, Oak and Sweetness

Sparkling wine gains its bubbles from a second fermentation in bottle or tank, and fortified wine gains strength from added spirit whose timing decides sweetness. Oak seasons a wine while steel preserves fruit, and residual sugar sets the dry-to-sweet scale.

Chardonnay, Sauvignon Blanc and Pinot Grigio

Chardonnay is a neutral grape whose style is written by climate, oak and malolactic conversion, while Sauvignon Blanc is intensely aromatic, herbaceous and high in acid. Pinot Grigio and Pinot Gris are the same grape made in two very different ways.

Riesling, Chenin Blanc and Viognier

Riesling and Chenin Blanc are high-acid whites made anywhere from bone dry to lusciously sweet, so sweetness must always be checked rather than assumed. Viognier is the low-acid, full-bodied opposite: intensely perfumed with apricot and blossom, yet dry.

Cabernet Sauvignon, Merlot and Pinot Noir

Cabernet Sauvignon is deeply coloured, tannic and structured; Merlot is softer, plummier and more approachable, which is why the two are blended in Bordeaux. Pinot Noir is the pale, high-acid, low-tannin red that thrives only in cooler climates.

Syrah, Grenache, Sangiovese, Tempranillo and Malbec

Syrah gives peppery, savoury reds in the Northern Rhone and rich, jammy Shiraz in Australia, while Grenache brings high alcohol and red fruit to Southern Rhone blends. Sangiovese is high-acid and savoury, Tempranillo is oak-marked and leathery, and Malbec is soft, dark and generous.

A Structured Approach to Tasting

A structured tasting always follows the same order: appearance, nose, palate, conclusion. On the palate, assess sweetness, acidity, tannin, alcohol, body, flavour intensity and finish separately, and never confuse fruitiness with sweetness.

Judging Quality and Recognising Faults

Quality is judged on balance, length, intensity and complexity, and a faulty wine is a different matter from one a guest simply dislikes. Learn to recognise cork taint, oxidation, volatile acidity and reduction, always taste before pouring, and remove suspect bottles discreetly.

Serving Temperature, Glassware, Storage and Preservation

Serving temperature is the most easily controlled and most commonly mishandled service variable: cold mutes aroma and sharpens acid and tannin, warmth releases aroma and exaggerates alcohol. Correct glassware, stable cool dark storage, careful opening and inert-gas or vacuum preservation protect the wine after that.

Food and Wine Matching, and Guiding the Guest

Match the weight of the wine to the weight of the dish, then use the mechanisms: salt and fat soften tannin, food acidity and sweetness demand a wine at least as acidic or sweet, and chilli punishes alcohol and tannin. Guide guests by asking what they have enjoyed, offering two options in plain sensory language, and never correcting or steering by price.
